I don't understand how is still not possible to reasign the Users directory to another drive.
For several reasons: security, access speed, posibility to install the system on a SSD, etc.
If you are able to do it in some... "professional" way, please let us know! :)
Moving the user profile folder is actually rather simple:

if you only want to change the document/music/etc folders, rather than the whole user branch, check out this simple sevenforums tutorial.
Pop quiz 1: There is a 'c:\users\default' and 'C:\users\default user' folders.
When as an admin, copying a customised user profile to be applied to all new users, which above folder do I copy to?
Pop quiz 2: The new user is a domain user, all their files should be on a network share. Network path's vary, according to domain GPO (Students files on serverA, others on serverB, staff on serverC). Novell login script maps them according as H: drive. How would I go about defaulting their windows profile to H: drive?
As I understand, the profsrv service sets up the folders to the default C:\users folder before the novell script executes.
I've gotten this to work using symbolic links and I haven't had problems for a few months. Here's the instructions: Yanzzee: Move Windows 7 Users folder to another drive
