Sounds like the Desktop Cleanup tool is set to act on a regular schedule. That cleans up all unused desktop shortcuts. Apparently that may have been moved up from the 60 day default to every few days?

One way of keeping that from being a problem or to simply rule it out is found in a guide for disabling the built in feature you can look over at System Maintenance Troubleshooter - Turn On or Off

Another idea would be adding a new toolbar onto the taskbar where you create and drag the shortcuts for those docs into a specific folder used for the new toolbar. Quick Launch - Enable or Disable

    longshanks,
    another approach:
CCleaner | Tools icon | Startup button | Scheduled Tasks tab |
disable the entry for the clean up tool (don't know the precise wods)

Link to CCleaner in my signature.

A funny thing came up in the search results when looking at other similar problems where one inquiry seen at desktop - Why do my shortcut icons get broken on Windows 7? - Super User brings you right back to SF's own tutorial section. Desktop Icons - Hide or Show

There are different causes for and some solutions to consider while Option Two in the guide there may be what will work for you.
