Editing the registry entries directly gives you much more control and access to all the features of Windows Explorer, not just those that were exposed in the folder option dialog up to XP. For instance:

Associate two extensions to the same type.
Edit all the options of all file types.
Modify and delete the built-in options.
Create an entry for all types.
Create an entry for unknown extensions.
Add an icon to each menu item.
Create cascading menus.
Add/modify/delete shell extensions.
Create per-user associations, thus not needing admin privileges.

Just to name a few on top of my head. Of course chances to break something also exists if used carelessly, and Microsoft not properly documenting everything is a drawback too.
