You should *really* read that thread I linked....
I cannot vouchsafe one way or another about Foxit, but with other products bundled with Ask, just b/c you untick does not mean it does *not* get installed.

Ive checked installed programs, checked program files and manage Add-ons in IE and nothings there. No short cut to ask was installed either.
As with any of these dodgy installers, the offending bits can be removed after installation and you can continue using the main program.
Again, it is hte philosophy behind the developer's rationale to bind with said Ask. I know I can get rid of it, but why bother?
Besides, I ahve a licensed Academic Acrobat Pro, but even if I didn't, I'd much rather use the Open Source SourceForge.net: PDFCreator
Try running IE8 in 32 bit mode.
IE8 (x-64) doesn't have Adobe flash compatability -- so I wouldn't be surprised if PDF didn't work either.
(Ensure of course that you've either installed Adobe Acrobat (commercial program) or Adobe Reader (Free) on your system.

Hmm, I didn't think about that....
However I assumed that it was b/c of the 7.x build, as I don't think you can install 7 on Vista and have it work at all....
Vista is not mentioned until the 8 series.Adobe Reader 7.0.9 system requirements
Windows
- Intel Pentium or equivalent processor
- Microsoft Windows NT with Service Pack 6 or 6a, Windows 2000 with Service Pack 2, 3, or 4; Windows Server 2003; Windows XP Home, Professional, or Tablet PC Edition with Service Pack 1 or 2
- 128MB of RAM (256MB recommended for complex forms or large documents)
- Up to 90MB of available hard-disk space
- Microsoft Internet Explorer 5.5, 6, or 7; Firefox 1.0, 1.5, or 2; Mozilla 1.7; Netscape 7.1 or 8.0
Just use Sumatra Sumatra PDF viewer by Krzysztof Kowalczyk
Teeny tiny, fast, works on all versions of 7
Sumatra is good - I have it on my PortableApps UFD, just forgot about it.
But I have a license for Acrobat Pro, so I use that myself....
