Windows 7: on my Asus laptop i have only "stereo" as an option

The manual is a bit vague so hard to give a definite answer but your receiver does have an optical in. However it does not say what formats it supports. An external USB sound card such as the Sound Blaster X-Fi Surround Pro 5.1 (see link) has optical out. This should work. You will also need an optical cable (assuming you do not have one). They are also called a TOSLINK cable.

Itís unfortunate but given the limitations of your hardware your options are somewhat also limited.

Your receive does support a optical in so you can use something like this Amazon.com: Panlong HDMI to HDMI and Optical SPDIF + RCA L / R Audio Extractor Converter HDMI Audio Splitter Adapter (HDMI in, HDMI + Digital & Analog Audio out): Electronics. And thanks society I was trying to say sp/dif as that's how it's labeled on a lot of my own electronics.

So does it means that if i will by this converter and will connect to my laptop, in my playback options i will have not only stereo any more but also 5.1 option?

My experience with these HDMI to SPDIF converters is that they can be a bit of a hit or miss with very little support should something not work. This is why I mentioned the Creative Sound card which would have a larger support base.

Did not see you had mentioned the 5.1 pro I own this and driver support is pretty bad for this device though I use to use it for just analog and as a dac for just the optical out it is probably fine. The one I linked would require the OP to have it it set to B mode and I agree if he can afford the 5.1 pro its a better option since it will be just an audio output while the other one is off a different device and uses two resources for it to function.
