At the bottom of the Control Panel > Personalization window, click the "Window Color" link, then click the "Advanced appearance settings" link there to get granular control over colors of other items, like window bar, font, etc.

Post a link to the theme you downloaded.
If cluberti solution above does not work for you you will have two choices 1 ask the theme maker to change it for you or 2 you will need to purchase Ave's Windows7 Style Builder and change it yourself. But post the link to the theme first so if I can check to see if that font color can be changed I am pretty sure it can.

I downloaded and checked out this theme and that text color can be changed like I said above you'll need to ask the theme maker or purchase Windows Style Builder and do it yourself, a text color property needs to be added at both
Buttons, Boxes & Controls > Buttons > Button > RadioButton
&
Buttons, Boxes & Controls > Buttons > Button > CheckBox

The only one that I know of that will change text colors like that is Windows Style Builder and there is no trial version of it just for your information is only about $22.50 US in my opinion you will not find a piece of software that does so much for that price an example would be WinRar is $29 US and all it does is compress/extract a file or folder.
