W7-X64 with vmware -- a VERY HAPPY camper here
Even on a 4GB Host machine I've managed to load up and run CONCURRENTLY quite successfully TWO Virtual Windows W2K3 R2 server machines BOTH running SAP systems -- these are Hugely demanding on systems -- one is running the BW / BI (Business warehouse / Business Intelligence) - a data mining type app which extracts analytical data from another SAP system / file / other non SAP system and a "Classical SAP ERP" system (an "IDES" training system).
Meanwhile on the HOST I'm watching BBC2 TV via a satellite TV card and running the "Front end" SAP GUI to do my work on the two SAP systems.
Response time is fine.
I couldn't get this stuff to work at all properly on the X-86 Windows 7 system (far too slow) and on VISTA x-64 it ran as slow as molassess.
Another REAL plus for Windows 7 X-64 and Virtualisation.
(I'd recommend if you run these type of apps on your VM's then use VMWARE SERVER (its free) as these can run the virtual machines in the background -- which is what you need if you want to access things like data base applications and ERP software running on them. If you use Workstation you need to run these (the Virtual machines) as FOREGROUND processes which increases the overhead on the host.

Well done MS - don't know what you've put into Windows 7 x-64 enterprise but I'm impressed.
