you can modify the 7100 iso from Microsoft to allow you to upgrade from 7048... It's very simple (you modify a file called cversion.... super easy) ... Generally I wouldn't ever recommend upgrading, but since it's your computer and not mine... heh... Actually I upgraded my x-gf's machine from 7022 to 7229 just a few days ago...
Advice i have is backup all your important files, and Clean install to latest version.

You will not be able to do an Upgrade install from 7048 to the RC builds, you need to do a Clean install and start again. You could use the Windows Easy transfer utility to get your pictures, documents, etc, transfered easily I believe (click start, type windows easy transfer), I believe it will see another partition as a drive it can transfer from, but I haven't done a full test on that yet.
But it can't hurt to try if you want to create a partition for a new build, this way if it doesn't do it you just transfer them manually. During the process it says from a "USB or External Drive", but I think it will do it from a partition also.
There have been numerous stability and other performance changes in the newer builds so I recommend to AT LEAST get the RC 7100 build if you want to continue using W7.
Since it's obvious you don't have any issues downloading leaked copies I'd just go to 7229 (You can use the RC or Beta keys and activate it to use til mar '10) or 7264 (you can't activate this with RC or Beta keys, but you can use it for 120 days by rearming it every 30 days... How to extend the Windows Server 2008 evaluation period)

i installed the 7100 before and it was buggy for me

It 7264 but there are no activation keys there is always the re-arm feature, so you will be able to use it for 120days
