The HKU\S-1-5-21-xxx entries are your profile - the others are service profiles (System, Network, and Local).
Everything there looks OK.

Please give examples of the folders to which you say you are being denied access - note that there are a number of such 'folders' in Windows which don't actually exist, but are simply markers for backward compatibility with Windows XP and earlier.
