When you run Windows Update, what is shown in available updates?

No. If you don't want automatic updates you can turn them off when you click change settings.

If you don't install it you can't check for updates...

Why don't you want to install security updates and fixes? -- they are supposed to give better security and fix things.

If you insist on installing only SP1, you can download it from:
Download Windows 7 and Windows Server 2008 R2 Service Pack 1 (KB976932) from Official Microsoft Download Center
(if you're on win7 64 bit you'll need windows6.1-KB976932-X64.exe)

Is the performance gain really worth all that trouble?
Maybe consider using the SSD for caching, and install windows on your bigger drive. would improve your overall loading performance (at the cost of some start up time).
