You can find people's interpretation of how to adjust for accurate temp readings, but it is just speculation.
Information generally tells you to get accurate ambient temp, the actual TJMax from Intel (they don't give specific info) and you can configure your CPU core temp app.
When I tried this I kept getting idle temps below room (ambient) temps, most sites agree that this is not reliable.
From my searches, it's generally accepted to leave it where it's at, or use laser temp device on the CPU case. Which may not be that accurate.

As with everything on the web, opinions will vary.

With more than one graphics card, a 750w PSU will give you room to add components later.

I would check into the brands Corsair and Seasonic. They will cost more but they are worth it. You keep changing what you are going to install but 750W quality power supply will take care of most needs.

Have you done anything with your CPU cooler and thermal paste?
What are your CPU core temps?

Yes, uninstall the current drivers and install an older one.
