As far as I know you can only make cheese in the US from pasteurized milk (FDA rule). That's like trying to make wine from cooked grape juice - all you get is "stuff". I have never seen e.g. a Camembert during my 15 years in the US - only stuff that falsely carried the name. And most of the other 600 kinds of cheeses I can buy here you cannot get at all - just a very few, e.g. Roquefort which is interesting because that is made from raw ewe's milk.

Sweet good cheese! that's a lot of cheese, that's a lot of people with constipation!
Cheese has gone the way of a lot of food items in the UK. We used to have a fairly limited choice but then along came supermarkets and French and other European cheeses started appearing.
This has led to a rediscovery of home grown specialist cheeses. I can now buy half a dozen made in my own county including the truly lovely Garstang Blue.
