I'm a "redneck" cooker myself. Into BBQ.....so ribs, pulled pork, beef brisket all rank right up there for me. I'm not much into alcohol and wines though....and I've got a bit of an allergy to shellfish....so my ability to do seafood is pretty limited.
BBQ meat mixture with potato salad, BBQ beans, and iced cold bottled beer is my favorite.

You don't have a flag under your avatar. That food sounds like Texas. Are you from Texas?

Liver and onion casserole- but only every six months or so.
Fresh herring fillet dredged in horseradish sauce and then coated in oats and gently fried in butter.
Freshly dressed crab. I'm the only person I know who can dress a crab which seems an awful shame for them.:)

No, not in Texas. Born and raised and currently living in Michigan. But my cooking specialties are outdoor cooking on the grill or in the smoker. And while steaks on the grill are nice....a rack of ribs done up right in the smoker are so much more flavorful.
