    CRANBERRY CAKE

    Combine in bowl
    2 Cup Flour
    1 Cup Chopped Dates
    1/2 Teaspoon Salt
    1 Cup Sugar
    1 Teaspoon Soda
    1/2 Cup Chopped Pecans
    Rind of 2 Oranges - Grated
    1 Cup Fresh Cranberrys

    Add
    1 Cup Buttermilk
    3/4 Cup Oil
    2 Beaten Eggs
    1 Teaspoon Vanilla


    Mix well (can be mixed by hand)
    Pour into greased & floured Bundt pan.
    Bake at 400 for 30 min.
    Reduce heat to 350 and bake for 1 hr

    Topping
    1 Cup Orange Juice
    1 Cup Sugar
    Dissolve Sugar in Orange juice.
    May be done on low flame to help dissolve sugar


    After removing from oven perforate while still hot in pan and
    Immediately pour topping over perforated cake.

    Cake is best when left in pan overnight.

    well the kids are in bed, beer,mince pie and carrots left out for santa and reindeer.

    everything done except to fill the stockings and sprinkle a little santa glitter round the hearth,
    have to leave those til very late in case some little people wake up or cant sleep and come downstairs...

    have a great xmas eve, and have a great day tomorrow.
