Been a long time since I've posted, which is a good thing!
Is there a way to make the default for all windows to have the "name" category/column only, not the date modified, etc columns?

You could use the method in the tutorial below to set a default folder view to all folders.
You would basically set all folders to use the same folder template (ex: "General Items") for detail view, set the view of a folder how you wanted with only the "Name" column, then "Apply to Folders".

Since you only wanted a "Name" column in details view, you might see if you may like "List" view.
