I wonder if I can just extract that installer, find the mouse driver, point it to the right .inf, and not install the whole setpoint suite, cause that really messes with your system, I've used it before.
That is possible, but I have never done it with this mouse and driver, so I can't help you any further on that. There might be some information on the web about it.

Logitech do not supply specific drivers for that mouse on Windows 7 x64. It is supposedly incompatible, but the drivers I gave a link to do work.

It is always best to check the compatibility of various hardware before you buy it, trying to get hardware to work for which there are no "official" drivers from the supplier can be extremely difficult and time consuming, if it works at all.

Why would I want to restore my registry to an earlier version?
Make a system restore point before you install drivers, Then you can revert if something goes wrong.

I guess I am going to have to install the whole setpoint suite, because I am not sure which device in the device manager to point to the extracted files.

Indeed, in such a case, that would appear to be the most appropriate course of action.
