I used to do this a lot - namely convert mkv and avi files to DVD. The reason to do that is simply to watch the video on the big screen instead of the PC (and I do not want to connect the TV to the network and stream stream stuff from the PC). Indeed, you need some special software to convert mkv files to DVD - for example Nero cannot do that. I have not found any reasonable free program to do that though.
By far the best program to convert various video files to DVD is called ConvertXtoDVD. It's not free, but it can handle most formats including mkv and frankly is worth the price. If you want something free, check out the site videohelp.com, they have a lot of information on anything video. Just be careful since lots of it is rather old.
Finally, I should mention that recently I have stopped using ConvertXtoDVD. Not because there are problems, but because I don't need to convert video to DVD anymore: my Blu-Ray player is capable of playing almost any format I ever had (that includes avi and mkv). So nowadays I just watch the HD mkv files directly on my Blu-Ray player and don't need DVDs. The files can be placed on a USB drive or even burned to disc, but without any conversion.
