One thing, (just a minor annoyance ), is there anyway to lose the Union flag on my profile and just have the St. Andrews saltire flying freely?

I've done it for you, it's not my favorite flag either

Welcome to the Seven Forums, to answer your question go into your User CP, then go into "Edit your details" then scroll down till you see "State/Region Flag" and change it to a blank selection. (See PNG)

You can go to your User CP, top tool bar on any page.

Top left side click Edit Your Details.

Scroll down to Country Flag, in the drop box choose the first one, which is a blank space. This will take the flag out. You can leave the state/region Flag as is, then it will remain.
