hidden files
I am logged in as administrator and I have my folder options set to view hidden files. I can see the hidden files in Windows explorer, but I can't unhide them. Why not? The checkbox is grayed out

Are you sure you're looking in the right place? Most options in Folder Options - tab "View", are check boxes but for Hidden files and folders it's radio buttons.

In the view options, I have the correct radio button pushed and all 3 checkboxes are unchecked. So I see the hidden files. I just can't unhide them.
Please go ahead and post some screenshots showing what you are seeing with the folders, and your Folder Options settings to see if we may be able spot anything. :)

The Music folder may have it's attribute locked to be hidden by iTunes, but you might see if using the command below in an elevated command prompt may help.
File and Folder - Hide or Unhide
ATTRIB -H "F:\Music\iTunes\iTunes Media\Music" /S /D
In addition, this may make it easier to toggle to hide/unhide files and folders as needed. :)
File and Folder - Add "Hide" and "Unhide" to Context Menu
The ATTRIB command changed the radio button to "Don't show...", so that didn't help. I ran the registry command and that made it easy to click "unhide" from the context menu, but it did NOT change the attribute of the hidden files.
Ok. The command was for the folder only. See if the command below for all files in the folder may get it sorted.
ATTRIB -H "F:\Music\iTunes\iTunes Media\Music\*" /S /D
