Windows 8 has an interface that isn't friendly to a mouse and keyboard user. I don't think most here are moving to it. I'd assume it will have its own set of drivers and I have no idea how Windows 7 drivers will work with it.

There is a Windows 8 forum here, where you can probably get more comments:

As you are asking about a car PC, i'm not sure if drivers means the Windows HD drivers, or the drivers (people) driving a car with PC built in ?
Personally, i would not like to hear ANY drivers are causing accidents while someone is playing with a PC while driving a car.

If you don't have a test system, play with it and learn it in your driveway before going on the road.
Win 8 beta releases have been available for quite a while now, so you can test it!

I'm staying with Windows 7 for a long time. Windows XP had a very long run, and I know some systems which are still running Windows XP with no problems at all, apart not being able to recognise my USB drive with I formatted with the VFAT file system.

The USB stick works fine with the Windows 7 computer though

i wont be, though if you have a touch screen then you may find you like it.
however it will be a learning curve for you as its a tricky os to get the hang of,

Also, if you have a Xbox 360, then you may find easier to adapt to as the UI of Windows 8 is almost the same as the Xbox 360 Dashboard which was forced as a update a few years ago I think; may have been a little sooner.

I would verify that your touchscreen is compatible with Windows 8 first.
