Windows 7 Ultimate x64

It won't go away by simply uninstalling IIS, as it contains the web pages that the server provides to browsers. As it's considered user data, it will not be deleted automatically. But if you don't use it as a web server, deleting it afterwards is completely safe and will save a few MBs.
