I installed 7 with two monitors hooked up and turned on and it detected both of them just fine. But after the install when I boot to windows if both monitors aren't "on" when I boot it won't detect the second monitor when I turn it on. I have to boot with both monitors on for it to detect both of them.

It is very important that you do so, blue screen errors, bugs, failures etc.. we have to make sure that everything works fine for the RTM version, The less buggier the better, so please don't forget to send feedback to Microsoft if you have a problem :);)
I don't know if this was discussed somewhere already but I noticed that there is no longer a option to give feedback on every single window you open.
btw: I just installed W7 an hour ago:p.
