Pinning/Unpinning Data Folders - Dropdown Menu Opened From Taskbar?

I find the Windows terminology used to describe 'pinning' items is confusing.

I have frequently used programs pinned to the taskbar. When I right click one like Excel or Word an Open File dropdown dialog opens. It shows 'Recent' folders under 'Pinned' folders.

I managed, but no longer remember how, to 'pin' a folder, perhaps by chance. How do I control this process (delete and/or add pinned folders)?

Searching turns up the possibility of adding a data folder to the taskbar, but I can see that quickly adding to clutter. The option of having frequently used data folders in the dropdown dialog is a clearly useful feature.

Undoubtedly there is a tutorial that covers this but I don't know how to ask the question that will reveal it. I apologize for asking a question that has probably been addressed multiple times.

    thanks

Forgive an old man with failing eyesight, I solved this one by trying one more time.

Having done so I will document what works on the remote chance that someone, like me, searches for the answer.

    1) Right clicking on the 'pinned' file allows the option of 'unpinning' it.
    2) Right clicking on the file you want 'pinned' and 'pinning it' (this presupposes that you recently opened the folder you want pinned) puts it above the 'recently used' folders for easy access.
