I wouldn't do that. TDR is a very useful feature of the OS that allows it to recover from a failure that in previous OS's would have resulted in a bluescreen crash.
The fact that it can't recover using TDR and still goes to bluescreen means that the error is serious.
You've done all the diagnostics: you tested your memory, checked the power supply, cleaned and replaced the drivers, used different drivers. That leaves as the only logical conclusion: your hardware is defective.
The ATI 5850 is a very good, high end video engine that should work well for most current games even without SLI, but the cards are made by different vendors and you can't assume that every card using the 5850 chipset is the same.
Another possibility that I don't recall mentioned: are other people able to play these same games with only one 5850 card without video errors? If you turn the game resolution down, does the problem go away?
