Sorry the Bios upgrade did not help. As I re-read your original post several times, some questions came to my mind. Perhaps the answers may shed more ideas on helping you solve your problem.
First stated:"freeze at "Starting Windows", freeze at "Welcome", freeze after getting to the desktop. ONLY when nVidia Control Panel has "Enable SLI" set (all nvidia drivers WHQL and Beta), IF I shut down the system with sli disabled, it will start up without any worries and does appear to run both cards in SLI perfectly while in operation.
Anyway to verify that SLI is working without the Nvidia drivers? Why the need to Enable SLI with Nvidia control panel? Does'nt Gigabyte provide a user control panel for their SLI cards?
Then you stated: So basically the Gigabyte drivers (GV-N98XPZL-1GH - GIGABYTE - Support&Download - Graphics Accelerator - Driver) work with 'enable SLI' perfectly, whereas the nvidia drivers do not...
Do you need the Nvidia drivers at all? If so, why?
Another thing I noticed is that you are running Windows 7 in 32 bit mode vs. 64 bits. Any particular reason for this? With such a powerful MoBo and CPU I would recommend installing 64 bit and try again.
I really hope you can solve your problem since the games you mentioned should work and look awesome with the hardware you have.
