So typically, how much does a Win 7 system need as far as SSD memory and how much do you allow as a margin. Page drive on the spinners or??
64GB SSD would hold windows no problem. My windows partition is 64GB on my spinner at the moment. Although I may opt for slightly bigger as I plan to install more and have some Virtual Machines set up too. I always keep my pagefile on the same drive as Windows myself.
Windows 7 supports TRIM, which is supposed to eliminate the need to refresh SSDs. I believe that it requires that the SATA controller be run in AHCI mode.

For a Windows install you'd need about 12-15GB for Ultimate x64 SP1 and keep the page file on the SSD. You should disable Hibernation, it will create a file as large as installed RAM.
AHCI allows for NCQ, Hot Swap, and drive encryption, it's not necessary for an SSD and will run without it.
All I use for desktops are 60GB SSDs and I never ran out of space. I keep the whole system and a LOT of installed programs (no games) on the SSD. I eliminated the hiberfile and set the pagefile to 2GB. Never had any problems and Windows7 with all the programs never exceeded 30GB.
My user data is on the spinners. But I also run virtual partitions (vBox) on the SSDs. They take an additional 6GB for Ubuntu and 15GB for Windows 8. But that still leaves me with appr. 10GB of free space.
