When i start up my PC the CD Rom Drive shows in Device manager etc. but i only have to click somewhere or try to burn a disc and it disappears.

I would say that you have a ODD failing drive. Try to boot the win 7 installation disk or use a boot able Linux USB drive and try to use the Linux CD/DVD burning software.

M$ is trying to make Win 7 users move to Win 10. It has an update that prevents updates on Kabylake and Coffeelake CPUs.
There is a workaround Unofficial Patch Unblocks Windows 7 and 8.1 Updates for Kaby Lake, Ryzen - ExtremeTech

Use the offline security only updates. MS releases SP2 for Windows 7 - Windows 7 Help Forums

If you leave WU on automatic it will install the blocker again.
My suggestion is to turn WU to manual under Services (%windir%\system32\services.msc) and on the WU page set to never check.
- For Windows install the offline security only updates (not the Quality Rollup)
- Run WU manually to see the available office updates.
