So I restarted my machine one day and lo and behold Windows/Nvidia is no longer recognising my LG Flatron 17" LCD. Instead it is being detected as a "generic non pnp monitor" which prevented me from setting correct native resolutions.
The issue revolved around the EDID in my monitor somehow gone corrupted. So we need to trick windows/nvidia into recognising a new EDID

Essentially you need to recreate the .inf file and force a new driver install. Problem solved.
