The main problem with Win 7 and new hardware are the required drivers. Win 7 installation disk doesn't have USB 3.x, SATA, graphics and MVMe drivers. If there are drivers to the new hardware, you have to add them to the Win 7 installation disk.

From the latitude 5300 specs the chipset is integrated in the processor.

Should be possible. There are drivers for win7x64 UHD620 and according to the manual the usb3.1 port is compatible with usb3 and usb2.

    driver for intel uhd620

On another site a trusted poster reports the same drivers I pointed him to work for UHD630 as well.

I haven't looked into net drivers yet.

Before you begin, make a disk image of the M.2 2280 SSD drive. Use Macrium Software | Macrium Reflect Free or any other disk image software.

Also you must set BIOS properly.
    - Disable fast boot and Secure boot.
    - Under OS choose other.
    - May be a CSM to be set.

Add the drivers to the win 7 installation disk using Windows 7 Image Updater - SkyLake\KabyLake\CoffeLake\Ryzen Threadripper - VideoHelp Forum
