Looking to install Windows7 on B450M motherboard, Ryzen 3200G, NVMe

You don't need Rufus.
The Win 7 or win 10 has two images under \sources: Boot.wim and install.wim (or install.esd).
Boot.wim is the User interface to install or repair and install has the windows images to be installed.
Win 7 Boot.wim doesn't have the drives required to install on a Rysen MB but Win 10 Boot.wim does.
Once you've had added the drives to Win 7 install.wim you copy it to \sources on a win 10 installation drive.
- Download Media Creation Tool (MCT) and create a Win10 installation USB drive.
- With Explorer, go to Win10 USB drive \sources\install.esd and replace it with win 7 install.wim
Boot from the modified Win10 USB drive and install Win 7

So I've been reading articles on Windows 7 on Ryzen PC's, watching Youtube videos, reading tutorials, and literally zero people have mentioned anything about having to use the Windows 10 installer to install Windows 7. They all just add the USB3 drivers in and show it installing like normal. Is this a new thing?

I guess I will give it a shot the straightforward way (using a PS2 KB/Mouse) and if it installs I can add the drivers myself.
I it doesn't work I can try the Win10 method, it sounds really weird (how would the Win10 Boot.win know how to use the Win7 install.wim? Would you get a Windows 10 install User Interface?)

Yes, you will get a Windows 10 install User Interface. Boot.wim will install whatever the install.wim is, be that win7 or win10.

I've been through both installers and they seem to ask a lot of different questions (the Windows 10 installer insists on a Microsoft account and OneDrive stuff and a whole bunch of things not in the win 7 installer). How does that work?

Once win7 has been installed it should look like a normal win7 install. ie. You won't see any of that stuff because it's not part of the 7 install. You'll get the usual... enter product key, setup user account, choose password, etc.

Tried but did not work. Did I mis something?
Hello, tried replacing install.esd of W10 by install.wim of W7. Booted from USB and installed windows 7 ultimate. But at the reboot after installation, it could not boot and asks for disk repair...
Am I missing something?
