You can use a free program called bcdedit to alter the boot files to remove xp (and the boot screen to chose OS) then delete/remove/format the partition XP was on

Then if you want to include that space with 7 you can extend the partition or keep it as seperate drive space up to you

Was Windows 7 installed after XP or the other way around? Because if XP manages the bootloader deleting the XP partition may prevent the computer from booting any longer. But that can be easily fixed with a startup repair from a Vista/Windows 7 cd. But if Windows 7 was installed AFTER xp, then you will have no problems.

Open disk management by typing diskmgmt.msc in the start menu, and hitting enter. Delete the Windows XP partition and afterwards expand the Windows 7 partition or create a new one.

Then you need to delete the XP entry from the boot loader which can be done from msconfig, under the boot tab. I will gladly elaborate if necessary.
