Are you talking about Created, Modified dates in File properties or some date formulas on the Excel sheet?

Have you tried changing properties of this file to make it Read-only?
You could also archive this file into a zip file (Right click - Send to compressed folder). You would have to undo these options if you would ever want to edit it again though.

Suppose I created a MS Word document and mentioned date 24/2/2013 and when I opened that file on 28/2/2013 date automatically modified to 28/2/2013 instead of my mentioned date on that file as 24/2/2013,its creating problem for me to get proper record.

Please try inserting a date inside a Word file via option Insert | Text | Date and Time AND do not check Update automatically option (uncheck it if it is checked).
