the only thing I can find is changing the color scheme choices are blue, silver or black but that's not what you are asking for. I do not see a way to change the selected email color
Other then mail, what would you possibly use it for, that you couldn`t do yourself ?
Contacts ?
Addresses ?
Those you can just create in word pad.
Getting back to the original topic.
This might be helpful,
Change the color of selected items in Microsoft Office

As stated, you can change the colors in office to blue, black or silver, but the background where you type is still white, but as also stated, don`t see how it helps the OP.
You can also change the font color, I thought that would help more then changing the background, but maybe if the words were say red and the background were say black he could then read it, but being color blind I don`t see how anything would help, I would think it would be one big blur, after my brothers stroke, that`s all he could see, couldn`t even see TV anymore, God rest his soul
