Andrew, As I'm on UK time and You're on Australian Time this fix may take a little more time than usual to do, but I'm not intending to give up now. What I intend to do is gather some links together to our Tutorials explaining things how they work and how to change things, (this is partly to save me repeating the work to write them but mainly due to the fact that Our tutorial writers do a much better job of explaining things than I do )
I will also try to put together a basic explanation of some of the concepts involved, As the setup you have does seem to be non standard so we are probably better off getting things back to what Windows expects to find, folder structure wise, and we can then work around this to set up things the way you need.
With the potential failure of your H drive a possibility I would suggest that you copy as much of the data that you want to keep to an area on other Drives for safety. And I will try to put the instructions together quickly for you
The issue with the failure to create a new folder this should be a simple matter of reversing what you did do using the instructions I intend to get together
