I think you must have the program itself pinned, so that every time you click it another instance gets fired up. Try this:
- Turn off Hide When Minimized (using the icon in the system tray, bottom right)
- Unpin Outlook from the task bar
- Make sure there are no instances of Outlook running
- Start Outlook, then hit its Minimize button to shrink it down to the task bar
- You should now have a button on your task bar for Outlook, not pinned
- Click on that task bar icon
- Tell us what happens :)
