As far as videos go, there is no better than VLC. It might not look good, but you can find tons of skins on the website. Furthermore, you won't need any codecs to play videos, as VLC uses them all internally.

For audio, I recommend keeping it simple. if WMP isn't your thing, foobar2000 should do the trick; it's a little hard to install skins, but you can check deviantART for skins (all packages have instructions).

For audio, I would recommend Songbird. Tons of skins, and it's and awesome player with plugins etc. It's pretty much a musical firefox.

Foobar2000 is amazing you can tweak it to your hearts content this is mine at the moment....

Skin is from here, very easy to setup too as it's a executable file instead of dealing with lots of dll files like the norm.

Just to show diversity in skins, here's my foobar

The biggest problem with foobar could be getting used to it, and any kind of tweaking would require patience, as some settings may destroy the installed skin. Like any other open-source, it's not easy to use, but once you get the hang of it, you'll never look back

I haven't chosen to add any skin to my foobar, as seen below. I use WMP12 for my videos, and I haven't skinned that either, actually.
