Hi Gurus -- Video question

On an HD TV I'm mystified as to why say a 2.0GB MKV / MP4 RIP of a blu ray DVD plays at a far better resolution than a Bog standard commercial DVD of the same movie - even if the commercial DVD is say 7 - 8 GB. !!!
The crazy thing also if I use something like DEVEDE to create a physical DVD on a bog standard DVD (4.7 GB media) from the 2.0 GB Blu Ray rip it still looks much better than the commercial (non Blu Ray) DVD.
So why doesn't Hollywood do the same trick and release the Non Blu Ray stuff on cheaper 4.7GB discs using the same "ripping" techniques. Seems a WIN WIN for everybody.
The MP4/MKV rips won't be quite the same quality as the original Blu Ray discs but they are STREETS ahead of the "Bog standard" DVD releases and even creating a DVD from the ripped Blu Ray makes for a far better viewing experience.
With Audio even a small amount of compression can sound not very good -- for example 128 kbs mp3 rip vs .WAV or .FLAC but it doesn't seem to work the same with video.
Any Guru's out there who can explain this to me. !!! (My old DVD library I copied to .iso's I'm now junking in favour of the mkv / mp4 rips if I can get them - and less disk space too !!!).
