Which version of Windows 7 are you using? Find out what version of Windows 7 you're running...
Go to Start and type winver in the search window.
If you're running Windows 7 Ultimate or Pro go to Start and type gpedit.msc in the search window. Open the group policy editor and make sure the Computer Configuration/Administrative Templates/System/Remote Assistance/Solicited Remote Assistance group policy is set to either Not configured or Enabled.
Note that if you're part of a domain environment group policies pushed from the servers may override whatever changes you make.
If you're running Windows 7 Home Premium you can configure this in the registry because you cannot use the group policy editor. Go to Start and type cmd in the search window. Right click on cmd.exe and select Run as administrator. At the command prompt type regedit. Navigate to the HKLM\SOFTWARE\Policies\Microsoft\WindowsNT\Terminal Services path and make sure there is not a DWORD named fAllowToGetHelp. If there is delete it.

That's not the reason it shows dimmed, but it's what would logically appear to be the cause; see screenshot;

The fix that I find for this changes the fDenyTSConnections value for the following registry key from 1 to 0 rather than deleting the key > [HKLM\Software\Policies\Microsoft\Windows NT\Terminal Services]
Apparently the value of that key determines if the setting is greyed out or not. I can't imagine how this value could change on it's own.
0 Allows users to connect remotely using Terminal Services / Remote Desktop 1 Disallows users to connect remotely using Terminal Services / Remote Desktop
"Allow users to remotely connect to this computer" Remote Desktop option is grayed out

This is in Group Policy; Computer Configuration -> Administrative Templates -> Windows Components -> Remote Desktop Services -> Remote Desktop Session Host -> Security. The policy is "Require user authentication for remote connections by using Network Level Authentication."

And you tell it first now? Your system specs show your OS as Windows 7, of course my esteemed fellow geeks have tried to help you in a Windows 7 issue, not knowing that it is not your OS.
- Remote assistance and Remote desktop are two totally different things; Remote assistance is not needed for remote desktop access. See the tutorial here to allow remote desktop connections: Remote Desktop Connection (RDC) - Network
- In Windows Server 2008 R2 you need to install Remote Assistance feature from Server Manager, it is not installed by default
- If the Remote Assistance feature is installed and enabled in Windows Server 2008 R2 and it's still grayed out, you have to check your Group Policies which might prevent Remote Assistance
