Your IP address is never used to send an email. Your IP Address is only sent to your email provider such as Gmail, Yahoo....

The email viewer will never see your IP address .. Only the Ip address may go to the Email service provider for records

You mean you don't want your IP address found in the email header that a mail recipient could see, right?
The only way I know how to do this is to either use a VPN or log into a webmail account like Yahoo using TorBrowser. The resulting email header will have an IP address but not YOUR IP address.
There are webmail accounts which will hide your IP but they cost money.

If you're using a standalone email program like Thunderbird, or Outlook, etc. then I'm not sure that it's possible to hide your IP address.

That's true even if there are some cheap and reliable webmail account solutions.
    For instance
servermx.com | Home page (the one i use) or Email Hosting - IMAP Hosting - Business Email Hosting - Secure Email - Email Service - Email Provider
that doesn't set your private IP in the header (SMTP or webmail roundcube)
