If you've been installing the latest Monthly rollups, then you won't need to install the Servicing Stack update. The latest rollups won't install without the SSU already installed anyway.
If you already have KB971033 installed, I'd leave it as is. It only caused issues for a day due to MS changes server side and MS has now resolved it. If you aren't using Volume licencing the update won't cause any issues anyway. I've just never installed it from day one.
If you've been installing the rollups and your PC is working fine, I would just stick with those, they're a much easier option.
The security-only updates you have to download and install manually every month from here:

There's quite a lot of updates to read through every month, you'll need to look for the ones titled "Security Only Quality Update for Windows Embedded Standard 7, Windows 7, and Windows Server 2008 R2"
Bear in mind that you'll also have to download the IE cumulative security updates every month too if you skip the rollups.
The IE updates are cumulative, so you only need to install the latest one as all past patches/fixes are included in every months. The windows security-only updates must all be installed every month to keep your system fully patched though. The rollups are different as they're also cumulative and are delivered through Windows update.
Honestly though, if your PC is running fine and you're not fully comfortable with searching around for updates every month and manual patching, then I'd stick with the rollups, unless they're giving you issues.
