With Windows XP Mode, you can use the latest Microsoft Virtualization Technology, Windows Virtual PC, to create a virtual Window XP environment in which applications appear just as if they were running on Windows 7

its not a mistake... once the application is installed it can be launched from your Windows 7 desktop just like any other app. it just all comes under the "windows virtual pc" folder

Yes I got that. I use XP mode myself. But shouldn't they have said "as if they were running on Windows XP"?

I think they said it exactly as they wanted: The apps installed on XP Mode can be launched directly from Seven Start Menu, so they appear on desktop as if they were running on Seven.
