I use PCDecrapifier for this. It will help get rid of a lot of the junk.

Another way to skin the cat would be to slipstream the installation disk with vLite: Download vLite For Windows 7

Yes, PCDecrapifier presents you with a list of installed software it thinks is unneeded.
