Not sure what they are and why theres so many. DO they all need to be running? If not, which ones can I stop?

That is perfectly normal. Here is mine.

Each of these instances is a container that is running inter-related services. The main reason for this is to provide system stability as it helps to keep related services together and apart from unrelated ones.
