I found there is a Foxit Reader 6.1.2.1224 update and downloaded/installed it over 6.1.1.1031.
The CloudReading version is also updated from 1.0.27.1025 to 1.1.47.1220.
I did not see any choice to OPT-OUT of CloudReading in the install.
Guess I just have to uninstall CloudReading every time there is a new version

Now let me understand this. If you store a document in the Foxit cloud, only people that happen to have Foxit can read it - is that right? If yes, that would restrict your audience, right?
I have been using Skydrive to store my documents. And from there you can read the document with the "Word Web App" which most browsers seem to have - I checked IE, Chrome, Chromium and Opera in Windows and Linux. Wouldn't that be a more flexible tool ? Make a test with this (random) document:

I'm not sure what the intent is for Foxit CloudReading...Foxit would have to explain their strategy, purpose, plans, ...
I'm the OP (thread starter) on this one...
I was hoping that CloudReading would not be installed "blindly" after version 6.1.1.1031.
I updated to 6.1.2.1224 and CloudReading installed again...

Thanks for the Pale Moon addition. I have heard that this is a nice browser. I have never tried it, but maybe I should.
So it is not quite clear what Foxit is up to. If you need Foxit on the receiving end too, then it is of little use because most people probably use Adobe.
Here is a .rtf I save with Foxit, try Adobe Reader to open it. Chosen at random , by the way.

I know this is an older thread but it looks like a lot of people read it, so here is my latest experience.
There is a new Foxit Reader (free) version 6.1.4.0217
With the new version Foxit Cloud is listed in Programs and Features, not Foxit CloudReading.
After updating Foxit Reader, I uninstalled Foxit Cloud and got an error message (see screen print below).
I updated another system and this time before uninstalling Foxit Cloud I found a startup service for "Foxit Cloud ...".
I stopped the service, changed the service to disabled, and re-booted.
I then uninstalled Foxit Cloud and did NOT get an error.
Some people are having problems with the new "Foxit Cloud":
