What do you mean by stealth mode?
But if I understand your question at all the answer would be no. Applications have ultimate control over how they will be displayed and how they will operate. Nothing in the registry can force an application to do anything.

What do you mean by "hiding your application"? There are multiple possible meanings for this.

Please explain your reasons for wanting to do this.

I can see no legitimate reason for this where someone needing to legitimately hide an application would need to ask how to achieve this

Your requirement is quite vague and unclear, so we can't come with a decent answer. If you say that there are "lots of software" or some article talking about it, post a link or name something!

I don't know and really doubt about that being even possible with touching only the registry (where did you read from it was possible?). 3rd party programs might do something to tamper with other software as you want, but please post clear requirements. What do you mean by "hide"? How to interact with "hidden" programs? How do you hide or unhide them?

Then, you should consider using Parental Controls to restrict what they can do. If they're running with full Administrator rights, "hiding" apps is not going to protect them from damage.
