App for changing fonts, colors etc ...

I've forgotten the names but there used to be a couple of apps that let you make changes to stuff that couldn't be changed in the Advanced Appearance section.
None of the Tweaking apps I've seen go in depth enough.
I'm not asking correctly so Google isn't my friend.
Any help would be appreciated.
