2 SSD IN RAID 0 will out perform 1 SSD in non RAID.

If they were identical:

two 2.5" 4TB HDD, I'd say yes!
vs.
one 2.5" 8TB SSD, I'm unsure.

Any feedback is appreciated.

Yes. But the limiting factor may be the MOBO chipset if it's old.

I don't think it worth the risk.
A RAID 0 array is a risky move. If you loose one drive you loose everything.
If your BIOS has a UEFI option you can install a M.2 NVMe drive on a PCIe card and use a SATA drive to have the boot EFI Fat32 partition that transfer the boot sequence to the M.2 NVMe drive.

If the 8TB drive were Partitioned as 4TB and 4TB?

Essentially, two Physical 4TB Drives vs two Logical 4TB Drives ALL being SSD's.

When you create a RAID 0 array under BIOS everything on both drives are lost.
You will see the RAID 0 array as only one drive. The created drive capacity will be twice the smaller drive, in your case 4+4=8T.
Back to the OS, the array can be partitioned and formatted.
I don't think it worth the risk.

RAID: Redundant Array of Independent Disks is meant more for a server than a home computer. Unless you're running your own server at home then it's really not something you'd want to use. If you're wanting speed, then go NVMe. If your MOBO doesn't have an m.2 slot for an NVMe drive there are PCI-e card solutions. But the limiting factor may be your BIOS if it's old. There may be a solution for that as well...

No one is stopping you from trying RAID of course. Go for it and learn about it. But I can guarantee you the newest Gen of NVMe drive will kick RAID's butt "big league."

My PC in question is an AIO. There are no provisions for an add in card of any kind.
To try your suggested NVMe solution, is there a non add in card solution to join the two technologies?

NVMe drives use the PCI-e bus. So either you have a PCI-e slot for a PCI-e to NVMe adapter or you use an onboard M.2 slot for the NVMe drive. Without those you're not using NVMe. Your next course of action for super high end speed is RAID of course, But if you RAID 1 two SSDs your chipset may not be able to handle it. It may though.
