remove 10 and install 7

I want to go back to win7 64 bit. Until recently I had the option to go back to a previous installation, which included win 7, but now it only shows an earlier version of windows 10. The pc was originally win7 64 pro and updated to win 10 64 a couple of years ago.
Microsoft is slowly removing any control of its OS, can I wind back to win 7, without a re-install?

Only if you made an os image previously, or if your win7 installation is preserved in a folder called Windows.old

Otherwise you will need to do a fresh install of windows 7

Do you have a Windows.old folder on your os partition, which is typically C

If I remember correctly, win10 only keeps that folder for 10 days.

Ten days after you upgrade to Windows, your previous version of Windows will be automatically deleted from your PC.

Installing win7 is not difficult.

It would help if you filled in your system specs.
