I have a Gateway machine I bought at Best Buy nearly 3 years ago. I've wanted to reinstall Windows for a a long time now, as the performance has been sluggish. It came with Windows 7 Home Premium 64 bit. I immediately upgraded to Professional with a WAU upgrade. I can assume the product key is still good?

I will be using the restore feature. There is a 13 GB restore partition.

Should be fine, I don't see why not. :)

The key doesn't even come into the picture if you're planning to run the inferior Factory Recovery with all of the bloatware and duplicate utilities which interfere with better versions in Win7. It self activates. You should make your Recovery disks first though as a backup in case it fails running from its partition at boot. Gateway Support - Full Factory Recovery

Most tech enthusiasts would never run the bloated factory intstall however but prefer to use the Product Key on COA sticker on machine to do a superior Clean Reinstall - Factory OEM Windows 7. The key is good for the life of the machine to reinstall as often as you want.
