When creating a clean install, I tend to take backup images at various stages, for ease of re-installation if required.

Although Windows 7, makes this quite easy with the System Image function, I cannot seem to be able to store more than one image per backup drive.

I have a number of backup drives and can store a single image on each one in the folder called "WindowsImageBackup", which is created when making a system image. I moved other folders (named the computer name, but renamed slightly for reference) from different backup drives into one of the "WindowsImageBackup" folders and rebooted using the recovery disk. This only then shows one of the backup folders, the others are not shown through this system recovery disk.

Is there a way to store more than one system image on a single backup drive ?

Yes, move to another backup software like Macrium or Acronis. That 1 image per device is one of the limitations of the built-in tool.
